Messy but sooooo easy to make!

sugar 250g

water 250cc

unflavored gelatin 21g

a pinch of salt

vanilla essence 1 tsp (un sachet de sucre vanillé!)

food coloring

  1. Place the sugar and cover it with water in a saucepan. Let the syrup boil until 120ºC.
  2. Place water, salt, vanilla essence and gelatin in the large bowl. Using an electric mixer, beat until it thickens.
  3. Pour the syrup slowly into the gelatin mixture and beat until white. Add coloring.
  4. Use a pastry bag to form the marshmallow strips on a pan with “tons” of sugar. Let stand uncovered at room temperature for as long as you can resist the temptation (8 hours will do).
